Dr Frias's is assistant head of the School of Food Science and Environmental Health and also lectures in Food Chemical Analysis. He is a professional member of the Institute of Food Technologist and the Irish national contact for the Iseki Food Association.

Product natural variability and shelf life.

Metabolic profiling.
